I think you misunderstood Sokka's training a little. Sokka didn't actually get good with a sword. It was about showing Sokka what skills he already has. The fight against the master was extremely one-sided in terms of swordplay, even with all the advantages Sokka created for himself, he didn't once get the upper hand.
