That could work. The gameplay is built around clearing out hordes, so if you mix that with the boss mechanics then it wouldn't feel unnatural.

hmm, for a boss battle, maybe a chaos cultist would summon minions by sacrificing their health, so killing the minions would drain them fast. or if a greater demon was getting summoned, he could have a bunch of support, and every time you wipe a wave or maybe a special cultist he might louse a bunch of health or get a big multiplier to the damage received for a time, because the summon ritual gets disrupted.
