Macros Plus would be great. I remember when it came out and really took everyone by storm. I think it (and Frontier, whose production was just wonderful) are the real sequels to the original (aside from Do you Rember Love). (OAV series much better than compilation movie version).

Hope you do Macross Plus, you will absolutely love it. Also if you want another amazing mecha series from around this period that has quite a bit of depth maybe give Armored Trooper Votoms a go, it would be right up your alley.
