The Sunfire Jean team is my second favorite. It's not very practical, but it's just fun seeing Jean hit that hard on her normal attacks.

Xiangling for sure. I have 6 characters crowned with 3 Crown of Insights, Xiangling Yoiimiya Kollei Yunjin Klee and Raiden.
