They did know, the Waffen SS units rotated through these camps as they got wounded. Not to mention huge trains filled with people going through cities loaded with Jews and other people. Lastly if you lived near the big extermination camps it would rain ash from the cremation chambers. If you go back and look they show this in Schindler's list.
