Knox didn't choose Fred because she rejected him. He was choosing her either way, and I think would have preferred it if he was hooking up with his god's vessel when she took possession of it. Either way he saw it as an honor that she was worthy of.

I missed that we were into the grand flow of Angel from "Smile Time" until the end of the series. This is the hardest death in all of the Buffyverse. Fred is the best of us all. And the quote of the Buffyverse: "There's a hole in the world. Feels like we ought to have known."
