The reason why Eren's hands is always bleeding during tense moments is to be ready to transform at a moments notice. You need to meet two conditions to turn into a naked Godzila. 1. Specific Intention. 2. A fresh wound. He's uses his blood as a threat and as a precaution against surprise attacks.
