Since most species do not have manes, hair always seemed like an artificial addition to their anthro forms to me (though a lovely looking one). Therefore I'd vote to keep their hair colour.

I love figuring out hypothetical anatomy and world building things like this! I do like the fade look as well, a nice blend of keeping human hair physics, but also having the change and blend over seasonal changes. But like MrShooter above said, there is always hair and fur dye!

I'm torn, this is actually one of the first times I've seen summer vs winter coat color changes depicted and I love it, and both options are believable to me... So I present a third one: "its part of their pelt and changes at the same time, but dying the faded hair back to its summer color is a popular choice"

The full color hair doesn't look out of place though since hers is in stark contrast on her summer pelt anyway.
