When the Six Paths technique is used, the corpse being utilized is granted the user's eyes. It doesn't replace the corpse's eye with a Rinnegan physically; it's more like an illusion. The same goes for Nagato with the Six Pains. As for the brothers, the reason they still have 9 tails power after being reanimated is that they consumed the Nine-Tails' flesh, so it's part of them now. Regarding how Madara is able to use the tailed beasts' power within the reanimated bodies, I'm not sure if it goes into full details, but it's one of those situations that makes you say, 'Oh, I see, so that's how he's able to do such and such.' If you guys need a more detailed explanation, I will leave it in the comments after you watch the episode that gives you an idea of how it works. just in case I spoil something that will eventually get brought up.
