Bubble Gum Flavour Formula

In this video, the goal is to demonstrate the bubble gum flavour but also to show you how easy it is to create unique flavours by simply combining a few compounds that don't occur in the same plants. It is an excellent recipe to experiment with and one you really can't mess up.
Bubble Gum Formula
Flavour Total: 10 grams
Formula Total: 50 grams
Each millilitre of the formula has 200 mg of flavour compounds.
Each drop contains 5 mg of flavour compound in a 25 mg drop.**
Use 2 drops to flavour every 100 mL to start.
2.0 g Ethyl Butyrate (pineapple)
1.5 g Ethyl Acetate (ethereal)
1.5 g Iso Amyl Acetate (banana)
1.2 g Ethyl Propionate (rummy, grape)
1.0 g Amyl Butyrate (fruity, banana, pineapple)
1.0 g Vanillin (vanilla)
0.6 g Aldehyde C-16 (strawberry)
0.2 g Wintergreen (minty, rootbeer)
0.1 g Methyl Isoeugenol (clove)
0.1 g Cinnamic Aldehyde (cinnamon)
0.6 Triethyl Citrate (ester type solvent)
40 g Propylene Glycol
The original formula comes from the Labtorium Tutti Frutti recipe.
** I recommend weighing 10 drops of the finished formula to determine how much your dropper dispenses.

How important is it to use Ethyl Acetate? Can that be skipped, or does it make the flavors last longer? What's its purpose, I guess, other than flavor?
