Does the order matter that much? Will I even notice that something is off if I don't go by the order? I only ask because I'm to hyped for the next arc.

I recommend that you watch Gintama Pori Pori hen before the 300s. This includes episode 329-341 and these cover events in the manga which happens before 300. 300 onwards there are 4 really great arcs in a row and I think this order is the best viewing experience Also skip the opening and ending for the Pori Pori hen season in case you decide to watch that first
