Hope you’re all ready for another edition of Naked Cooking with Toad 🐸👩🏼🍳 😜
Chicken Tortilla Soup

-1 onion
-1.5-2 lbs chicken thigh & breast
-8 cloves garlic
-4 carrot
-3 celery
-2 bell peppers
-2 jalapeños
-1 medium zucchini
-big can diced tomato
-4 cups chicken broth
-4 taco seasoning packets or make your own
-10 oz frozen corn
Brown chicken and onions in olive oil. Add garlic until sweetly fragrant. Add diced tomatoes to help scrape bottom of pot then add remaining ingredients minus the corn. Let simmer on stove top for hours or pressure cook for 30-35 minutes. Add corn and let simmer until ready to serve.

Mexi cheese
Sour cream
Corn chips (I prefer Fritos)
Cilantro
Scallions
