Scorpions, at least in real life, are closer to spiders than lobsters, not really good to eat, but if you had to, I would eat everything except for the stinger and you won't get poisoned. I would assume the venom would still hurt you even if you just eat it, maybe not as much, but there are a lot of different venoms that work in different ways, definitely not worth the risk.
