I recently did a "secret starting class" run as a Kaiden knight. You've got to farm for everything, but there's two great spots right in Limgrave, the drops are pretty good and their weapon is busted - basically the Exile Curved Sword from DS3. I even broke the "rules" a little and farmed up 2 for an occasionally damage boost when needed. It's also a blast getting your revenge by hopping on Torrent and running everyone down.

I have a suggestions for a video. A Gelmir Knight, the armor set can be acquired without killing any bosses and then all you have to do is farm weapons from knights to get the knight's greatsword or partisan and a shield if you want and use stormcaller aow. I did a run like this inspired by your videos and I had a blast would love to see you do a run with it.
